Orange Cranberry Cookies

  1. Preheat the oven to 350 degrees.
  2. Cream together the butter and brown sugar in a large bowl.
  3. Beat in the eggs one at a time until well mixed.
  4. Add the zest and extracts and mix well.
  5. In a medium bowl whisk the flour, baking soda, and salt.
  6. Stir in the oats, then add to the butter mixture and mix well.
  7. Fold in the cranberries and pecans (if desired).
  8. Drop by teaspoonsful two inches apart on ungreased cookie sheets.
  9. Bake for 10-12 minutes, or until the edges just start to turn golden brown.
  10. Let the cookies cool on the sheets for four minutes, then remove to wire racks to finish cooling.
  11. Store in a airtight container or freeze.
