Sunshine's green Chile ,bacon cheese pie
- 1 9"inch pie crust ( ready to bake)
- 1 packages Cheddar & monterey jack cheese 8.oz
- 3 lg eggs slightly beaten
- 1 cup half and half
- 1 4.oz can green chiles (diced)
- 1/4 cup real bacon bits
- 1/2 tsp ground cumin
- 1/4 tsp salt
- 1/8 tsp black pepper
- Line a 9"inch pieplate with pie crust , trim excess pastry around edges, prick bottom and sides of pastry shell with a fork , place in refrigerator for 1 hour, then bake at 375 for 10 minutes.
- Let cool on rack
- Spread 1 1/2 cup of the cheese in pie shell evenly,
- Mix eggs ,half-and- half, chiles salt, bacon bits , pepper and cumin: beat until blended.
- Pour in to pie shell, put in oven and bake for 30 minutes , cover with foil take out sprinkle with the rest of cheese , uncover pie ,place back in for 10 minutes more or until set..turn on broil for 2 minutes .take out of oven ,Let stand 15 minutes on rack.
