Spicy Pineapple Fried Rice
- 1 cup basmati rice
- 1 (20 ounce) can pineapple tidbits, drained
- 4 scallions, chopped
- 1 large red chile, finely chopped
- 3 sprigs cilantro, coarsley chopped
- 3 tablespoons oil, divided
- 2 cups fresh shrimp, cleaned and deveined
- 3 garlic cloves, minced
- 2 tablespoons nuoc nam
- 2 tablespoons soy sauce
- 1 teaspoon sugar
- cilantro, for garnish
- Prepare the rice according to the directions on the package and set aside.
- In a medium bowl, mix the pineapple, scallions, chile, and cilantro, and set aside.
- Meanwhile, heat 1 tablespoon oil in skillet, and saute shrimp until done.
- Remove the shrimp from the skillet.
- In the same skillet, over medium heat, add the remaining oil.
- Saute the garlic until golden brown.
- Add the cooked rice and stir.
- Add the nuoc nam, soy sauce, and sugar.
- Stir and heat thoroughly.
- Fold in the pineapple mixture and the shrimp.
- Heat through.
- Garnish with cilantro and serve.
