Zucchini Italiano
- 1 lb. pork sausage
- 2 Tbsp. butter
- 1 green pepper, sliced
- 1 (8 oz.) can tomato paste
- 1/2 lb. sharp Cheddar cheese
- 1 (1 lb.) can tomatoes
- 1/2 tsp. oregano
- 1/8 tsp. pepper
- 3 oz. uncooked noodles
- 1 c. chopped onion
- 1 tsp. salt
- 1 1/4 lb. zucchini
- Make sausage balls and fry them.
- Cook onions and pepper in butter until tender.
- Stir in tomatoes and paste.
- Add seasonings. Slice zucchini (do not peel) in 1/2-inch slices.
- Add uncooked noodles and sausage balls.
- Cover and cook until zucchini and noodles are tender, 45 minutes.
- Pour in a greased casserole dish and cover with strips of cheese.
- Place in a 350u0b0 oven.
- Remove when cheese is melted.
