Peach Frozen Yogurt
- 12 cup sugar
- 1 teaspoon gelatin
- 1 teaspoon ground nutmeg
- 12 cup whole milk
- 2 tablespoons corn syrup
- 1 12 lbs peaches, peeled, pitted, and quartered
- 1 cup plain yogurt
- 12 teaspoon vanilla
- In a saucepan, combine the sugar, gelatin, and nutmeg.
- Stir in the milk and allow to stand for one minute.
- Place the pan over LOW heat and cook for five minutes until the gelatin dissolves, stirring constantly.
- Remove from heat and stir in the corn syrup.
- Allow the mixture to cool completely.
- Use a food processor to process the peaches until they are smooth -- you might need to stop and scrape down the sides occasionally during this process.
- In a mixing bowl, combine the peach puree, the gelatin mixture, the yogurt, and the vanilla and stir well.
- Cover and chill for 8 hours.
- Transfer the mixture into the ice cream machine and process according to the appliance instructions.
- Serve.
