Black Eyed Pea Soup Recipe
- 1/2 pound bacon, diced
- 2 c. minced celery
- 2 c. minced green bell peppers
- 2 c. minced onion
- 2 cans (16 ounce.) tomatoes, undrained
- 2 cans (16 ounce.) black eyed peas
- 1 1/2 c. beef broth
- In large saucepan, cook bacon; add in celery, bell pepper and onion; saute/fry till soft.
- Add in tomatoes, peas and broth; simmer 30-40 min.
