Nut-Free Chocolate Hamantaschen

  1. Preheat oven to 350 degrees F .
  2. In a food processor, pulse chocolate chunks, coconut flour, and coconut sugar until you reach the texture of sand.
  3. Pulse in shortening and egg yolk until combined.
  4. Roll out dough between 2 pieces of parchment paper to 1/4-inch thick.
  5. Remove the top sheet of parchment.
  6. Cut dough into 2-inch circles using a round cookie cutter.
  7. Re-roll the scraps of dough to make more circles.
  8. Place some of the chopped chocolate in the center of each circle.
  9. Pinch 3 sides of each circle very firmly to form the dough into a triangle.
  10. Transfer triangles (Hamantaschen) to a parchment lined baking sheet.
  11. Bake at 350 degrees F for 6-8 minutes.
  12. Remove from oven.
  13. Serve!
