Lori's Coconut Chicken

  1. Boil chicken until just opaque.
  2. Drain.
  3. Let cool.
  4. Remove meat from bones.
  5. Chunk.
  6. Heat oil in a wok.
  7. Add the garlic and onion.
  8. Stir-fry 2 minutes.
  9. Add chicken, bell pepper and curry powder.
  10. Stir-fry 2 more minutes.
  11. stir in the nuoc nam, milk, soy sauce and coconut.
  12. Bring to s boil.
  13. Reduce.
  14. Simmer 3 minutes.
  15. Serve on Jasmine rice.
