Alehouse Steak Fries

  1. Notes**** The cooking times on this recipe is for a single serving.
  2. The time of pre cooking and deep frying will increase with more fries being added to the hot oil.
  3. (anytime you add food to a deep fryer the temperature of the oil will drop and take time to rebound back to 350F).
  4. You should never overload a deep fryer with too much food because it takes too long for the temperature to rise back again.
  5. Preheat deep fryer oil to 350F
  6. Pre cooking... Cook fries for 2 to 3 minutes.
  7. The potatoes should still be white with no color to them at all.
  8. Remove and drain on a paper towel.
  9. (at this point you are just cooking the water out of the potatoes).
  10. Refrigerate and cool potatoes for about 15 + minutes.
  11. (fries can be pre cooked a day or two in advance).
  12. Deep fry steak fries at 350F for 6 to 10 minutes.
  13. Cook until golden brown.
  14. Remove from deep fryer and drain on a paper towel.
  15. "Sprinkle immediately" with Lawry's seasoned salt (as they cool slightly the oil will draw the salt and seasonings into the potatoes).
  16. Chili Cheese Fries..... 1 order steak fries, 1/2 cup + of your favorite chili and 1/2 cup hot cheese whiz or your favorite nacho cheese sauce..
