Mexican Skewers with Avocado Salsa

  1. Soak 8 bamboo skewers in hot water for 20-30 minutes.
  2. Combine the Miracle Whip* with the next six ingredients.
  3. Coat the chicken thoroughly in the marinade then thread evenly onto the skewers.
  4. Chill.
  5. Salsa: Combine all the ingredients in a bowl to form a salsa.
  6. Chill.
  7. Grill the chicken for 8-10 minutes under a hot grill until cooked thoroughly.
  8. Place onto serving plates and garnish with avocado salsa and corn bread.
