Pace Chicken Chimichanges
- 2 12 cups chopped cooked chicken
- 23 cup salsa
- 13 cup green onion, slices (you can also use regular onions)
- 34 teaspoon ground cumin
- 12 teaspoon oregano leaves, crushed
- 12 teaspoon salt
- 8 flour tortillas
- 14 cup melted butter
- 1 cup shredded cheese, monterey jack or 1 cup cheddar cheese
- Combine chicken, salsa, onion, cumin, oregano, and salt in saucepan; simmer 5 minutes or until most of liquid has evaporated.
- Brush one side of tortillas with butter.
- Spoon about 1/3 cup chicken mixture onto center of unbuttered sides; top with 2 T shredded cheese.
- Fold sides over filling; fold ends down.
- Place seam side down in 13x9 baking dish.
- Bake in preheated oven at 475* about 13 minutes or until crisp and golden brown.
