Nectarine or Peach Chutney
- 1 kg nectarines or 1 kg peach, peeled, seeded and chopped
- 2 12 cups brown sugar
- 2 12 cups cider vinegar
- 1 teaspoon freshly grated ginger
- 1 cinnamon stick (not ground)
- 4 whole cloves
- 1 12 teaspoons salt
- 1 fresh red chili, deseeded and chopped
- 1 apple, grated
- 1 large onion, finely chopped
- Place all the ingredients in a large pan.
- Boil uncovered for 1 1/2 -2 hours (or until mixture has thickened slightly - stir every 20-30 minutes to stop the bottom burning.
- Pour into hot sterilised jars and seal while hot.
- Keep for 6-10 months in a dark cupboard.
- Once opened, keep in the fridge.
