Tami's Roasted Chicken
- 2 whole chickens
- 4 tbsp olive oil
- 1 salt & pepper to taste
- 1 paprika sprinkled on to chicken, rub in.
- 1 whole carrot cut in half
- 1 celery stalk cut in half
- 1 sprig of thyme
- 1 sprig of rosemary
- 1 lemon cut in half
- 1 fresh sage leaves about 8
- preheat oven to 425
- clean & rinse chicken
- pat dry
- drizzle 2 tbls of olive oil on to chicken rub in.
- season with salt & pepper
- rub paprika all over
- put carrot,celery, herbs into chicken cavity
- squeeze 1/2 lemon over top of chicken, put lemon rind in cavity
- roast chicken for 15 min
- lower oven temp to 375 cook for 1 hour or until chicken is completely cooked
