Plum Ginger Glazed Chicken
- 4 lbs skinless chicken pieces
- salt
- fresh ground black pepper
- 34 cup plum preserves (about 6 oz)
- 1 inch piece fresh ginger, peeled and grated
- 2 tablespoons olive oil
- 4 fresh rosemary sprigs
- 15 peeled garlic cloves, lightly mashed
- 2 fresh plums, pitted and sliced very thin
- Preheat oven to 375F.
- Lay chicken pieces on a baking sheet.
- Season generously with salt and pepper.
- Add the remaining ingredients and toss together so that chicken is fully coated.
- Bake for 40 inutes, or until the chicken is nicely browned and juices run clear.
