Junior League - Chicken Marbella
- 3 whole chickens, cut into squares
- 1 cup brown sugar
- 12 cup olive oil
- 12 cup balsamic vinegar
- 1 cup prune, pitted
- 12 cup pitted green olives
- 12 cup capers
- 2 tablespoons minced garlic
- salt and pepper
- 1 cup dry white wine
- 12 cup chopped flat-leaf parsley
- Put chicken in sealable bag.
- Combine sugar, olive oil and vinegar.
- Stir in prunes, basil, olives, caper, garlic, salt, and pepper.
- Pour over chicken.
- Marinate for 8-10 hrs in fridge.
- Arrange chicken in single layer with marinade in baking dish.
- Drizzle with wine.
- Bake at 350 for 1 hr, basting regularly.
- Remove the chicken and sauce and plate.
- Sprinkle with Parsley.
