City chicken

  1. mix together pork, veal, 1/4 cup breadcrumbs, egg, and seasonings.
  2. form into 6 patties and pierce with wooden skewers.
  3. heat oil in large skillet over medium.
  4. spread remaining 1/4 cup breadcrumbs on a plate.
  5. press each patties into breadcrumbs and place in pan.
  6. Cook over medium until no longer pink, about 6-8 minutes per side.
