Burrito Bowl Casserole
- 2-2/3 cups Cracker Barrel Shredded Tex Mex Cheese, divided
- 4-3/4 cups cooked long-grain brown rice
- 1-1/2 cups salsa
- 1 can (19 fl oz/540 mL) black beans, rinsed
- 1/2 cup each coarsely chopped green and red peppers
- 3 green onions, chopped
- 1 Tbsp. hot pepper sauce
- Heat oven to 350 degrees F.
- Reserve 1-1/3 cups cheese.
- Combine remaining cheese with all remaining ingredients.
- Spoon rice mixture into 13x9-inch baking dish sprayed with cooking spray; top with reserved cheese.
- Cover.
- Bake 30 min., uncovering for the last 10 min.
