Farmers Market Veggie Lasagna
- 3 cup chopped veggies of your choice
- 1/2 chopped onion
- 1 tbsp olive oil
- 1 egg
- 3 cup tomato sauce (or canned pasta sauce)
- 1 cup mozzarella cheese
- 2 tbsp minced garlic
- 1 cup ricotta cheese
- 2 cup leafy greens
- 12 whole grain lasagna noodles
- Saute onions and garlic over high heat until slightly tender
- Add veggies and saute until tender.
- Set aside.
- Whisk egg in ricotta and stir in greens
- Put a little sauce in a 9 x 13 inch pan
- Top with four noodles.
- Top with half the ricotta mixture, then half the veggies and 1 cup of sauce
- Top with noodles and repeat the layers.
- Finish with a third layer of noodles, the remaining sauce and the mozzarella.
- Cover and bake at 375 for 40 minutes.
- Remove foil and bake for 20 minutes more or until cheese is bubbly.
