Paleo Snack Balls

  1. Combine pitted dates and water in a microwave-safe bowl and microwave for about 40 seconds.
  2. Drain water off of the dates and then combine the dates and all of the remaining ingredients in a food processor.
  3. Process, continuing to stop and scrape the sides of the processor every few seconds.
  4. You may need to add a bit more coconut oil after a couple of minutes of processing.
  5. Process to the consistency that you desire.
  6. If you have kids that you are feeding these to you may want to process the nuts up a bit more.
  7. Roll into small balls.
  8. Store in the refrigerator (for 1-2 weeks) or freeze them for later.
