Paleo Snack Balls
- 10 Medjool Dates, Pitted
- 1/2 cups Water
- 1/4 cups Coconut Oil (may Need A Little More To Achieve Desired Consistency)
- 1/4 cups Almond Butter
- 2 teaspoons Pure Vanilla Extract
- 1 teaspoon Cinnamon
- 1/2 teaspoons Salt
- 1 cup Raw Walnut Halves
- 1 cup Raw Whole Almonds
- 1 cup Shredded Unsweetened Coconut
- Combine pitted dates and water in a microwave-safe bowl and microwave for about 40 seconds.
- Drain water off of the dates and then combine the dates and all of the remaining ingredients in a food processor.
- Process, continuing to stop and scrape the sides of the processor every few seconds.
- You may need to add a bit more coconut oil after a couple of minutes of processing.
- Process to the consistency that you desire.
- If you have kids that you are feeding these to you may want to process the nuts up a bit more.
- Roll into small balls.
- Store in the refrigerator (for 1-2 weeks) or freeze them for later.
