Easy Pea Puree
- 2 tablespoons butter, unsalted
- 1 medium shallots minced
- 2 cups peas, frozen
- 1/2 cup stock chicken or vegetable
- 1 x salt and black pepper to taste
- In a nonstick skillet, heat the butter until it melts.
- Add the shallots, cook for 2 to 3 minutes until fragrant.
- Stir in the peas and stock, cover and cook for about 5 minutes.
- Transfer into a blender, blend until pureed.
- Serve or chill in the refrigerator until ready to use.
