Mint Pesto Lamb Chops

  1. Heat gas grill on medium or charcoal grill until coals are ash white.
  2. Combine all pesto ingredients in medium bowl; set aside.
  3. Combine butter, salt and 1/8 teaspoon pepper in small bowl.
  4. Brush lamb chops with butter mixture; place onto grill.
  5. Grill, basting and turning occasionally, 10-15 minutes or until fork tender.
  6. Spoon about 1 tablespoon pesto onto each lamb chop.
  7. Place tomato halves onto grill; spoon about 1 teaspoon Parmesan cheese on each tomato half.
  8. Continue grilling 2-4 minutes or until heated through.
  9. Serve tomato half along side each lamb chop; serve with remaining pesto.
