Quinoa Thai Tuna

  2. Put quinoa in a colander and rinse under cold water.

  4. In a large saucepan, add water and bring to a boil.

  6. Add quinoa and reduce heat to a simmer.
  7. Cover and cook for 3 minutes.
  8. Then remove it from heat, set aside for 2 minutes and then drain any excess water.
  9. Set the pan of quinoa aside for a moment.
  10. 4.
  11. In a saute pan over medium heat, heat tuna for 90 seconds stirring constantly so it doesnt stick.
  12. 5.
  13. Add lime juice into the quinoa, then stir in tuna, mango, garlic powder, green onion and carrots.
  14. 6.
  15. Heat quinoa mixture for another two minutes over medium heat, stirring to mix all ingredients.
  16. 7.
  17. Enjoy!
