Quinoa Thai Tuna
- 23 cups Quinoa
- 1- 1/2 cup Water
- 3 ounces, weight Canned Flaked Light Tuna (I Used Spicy Thai Tuna)
- 3 Tablespoons Lime Juice
- 1 Sweet Mango, Peeled, Pitted And Cubed
- 1 Tablespoon Garlic Powder
- 1 Green Onion, Sliced
- 1 cup Thinly Sliced Baby Carrots
- 1.
- Put quinoa in a colander and rinse under cold water.
- 2.
- In a large saucepan, add water and bring to a boil.
- 3.
- Add quinoa and reduce heat to a simmer.
- Cover and cook for 3 minutes.
- Then remove it from heat, set aside for 2 minutes and then drain any excess water.
- Set the pan of quinoa aside for a moment.
- 4.
- In a saute pan over medium heat, heat tuna for 90 seconds stirring constantly so it doesnt stick.
- 5.
- Add lime juice into the quinoa, then stir in tuna, mango, garlic powder, green onion and carrots.
- 6.
- Heat quinoa mixture for another two minutes over medium heat, stirring to mix all ingredients.
- 7.
- Enjoy!
