Easy Chile Salsa

  1. In a large saute pan, heat the oil over medium-high heat.
  2. Add the tomatillos,
  3. onion, garlic, and chiles.
  4. Cook for about 7 minutes until the tomatillo skins are browned.
  5. Carefully peel the garlic cloves and transfer the mixture to a blender.
  6. Add the cilantro and 1 cup of water.
  7. Process until smooth, about 2 minutes.
  8. Season with salt and pepper, to taste.
  9. Pour the salsa into a serving bowl and serve.
