Southwest Corn and Bean Dip
- 2 cups cut up cooked chicken
- 14 cup chopped bell pepper
- 14 cup frozen chopped spinach, thawed
- 12 cup canned corn
- 12 cup canned black beans
- 14 cup jalapeno, chopped
- 14 teaspoon cayenne
- 12 teaspoon salt
- 12 teaspoon onion powder
- 1 teaspoon cumin
- 1 teaspoon chili powder
- 1 12 cups shredded monterey jack cheese (or similar)
- Mix all in pan on stove top in order given over medium heat.
- Add cheese last and let it melt and turn off heat.
- Serve with tortillas (I like hint of lime tortillas) or crackers.
