Oyster Volettes
- 12 cup cream
- 14 cup sour cream
- 1 small onion, very finely chopped
- 14 teaspoon salt
- 18 teaspoon cayenne pepper
- 24 vol-au-vent cases, cooked & cooled
- 24 oysters
- black caviar or red caviar, only a small jar (to garnish)
- snipped chives, to garnish (optional)
- Combine the creams and whip until thick.
- Fold in the onion and seasonings.
- Spoon mix into cold pre-baked vol-au-vent cases and ganish each with an oyster and caviar.
- Finish with a tiny amount of snipped chives if using.
