Oyster Volettes

  1. Combine the creams and whip until thick.
  2. Fold in the onion and seasonings.
  3. Spoon mix into cold pre-baked vol-au-vent cases and ganish each with an oyster and caviar.
  4. Finish with a tiny amount of snipped chives if using.
