Herb & Citrus Crusted Tilapia

  1. Preheat the oven to 400 degrees F.
  2. In one bowl, lightly beat the eggs with a pinch of salt.
  3. In a different bowl, combine all other ingredients, minus the tilapia.
  4. To bread the tilapia, first coat it with the egg mixture, then lightly press it onto the herb-citrus mixture.
  5. Line a baking sheet with aluminum foil.
  6. Bake the tilapia filets for 20 minutes.
  7. Serve it with a green salad, steamed veggies or mushroom risotto.
