Herb & Citrus Crusted Tilapia
- 2 whole Eggs
- 1 pinch Salt
- 2 whole Lemons, Zested
- 2 whole Oranges, Zested
- 1 cup Grated Parmesan
- 3 cloves Minced Garlic
- 1 sprig Fresh Rosemary
- 6 Tablespoons Minced Parsley
- 2 Tablespoons Olive Oil
- Salt And Fresh Ground Pepper To Taste
- 4 whole Tilapia Filets
- Preheat the oven to 400 degrees F.
- In one bowl, lightly beat the eggs with a pinch of salt.
- In a different bowl, combine all other ingredients, minus the tilapia.
- To bread the tilapia, first coat it with the egg mixture, then lightly press it onto the herb-citrus mixture.
- Line a baking sheet with aluminum foil.
- Bake the tilapia filets for 20 minutes.
- Serve it with a green salad, steamed veggies or mushroom risotto.
