Marmelatha Nektarinia - Greek - Nectarine Preserves
- 2 lbs large ripe nectarines
- 2 lbs white sugar
- 14 cup water
- 18 teaspoon vanilla extract
- 14 cup brandy
- 1 12 tablespoons lemon juice
- Peel and seed nectarines, and cut into large chunks.
- Add to a large pot with sugar and water and boil for 30-40 minutes, until the fruit is nice and soft.
- Keep a close watch toward the end and 5 minutes before removing from the heat, stir in vanilla, lemon juice and cognac and mix well.
- Place in sterilized jars and allow to cool completely before sealing.
