Sausage Cake
- 1 lb. Pork Sausage
- 1 1/2 Cup Brown Sugar
- 1 1/2 Cup White Sugar
- 2 Eggs, Slightly Beaten
- 3 Cups Sifted Flour
- 1 tsp. Ginger
- 1 tsp. Pumpkin Pie Spice
- 1 tsp. Baking Powder
- 1 tsp. Baking Soda
- 1 Cup Strong Cold Coffee
- 1 Cup Raisins
- 1 Cup Chopped Walnuts
- Combine sausage and sugars until well blended,
- Add eggs and beat well.
- Sift together four, spices, and baking powder.
- Stir baking soda into coffee.
- Add flour mixture and coffee alternately to meat mixture, beating well after each addition.
- Pour boiling water to cover over raisins and let stand 5 minutes.
- Drain well and pat dry with paper towel.
- Fold raisins and walnuts into batter,
- Turn into well greased and floured Bundt pan (9c size). Bake 1 1/2 hours or until done at 350.
- Cool 15 minutes before turning out of pan.
- To store wrap tightly in plastic wrap and refrigerate.
