Burrito el Grande
- 1 lb. (450 g) extra-lean ground beef
- 2 cups salsa
- 1 green pepper, chopped
- 1 cup instant white rice, uncooked
- 1 can (14 fl oz/398 mL) refried beans, warmed
- 6 large flour tortillas
- 1/2 cup Cracker Barrel Shredded Tex Mex Cheese
- 1 cup shredded lettuce
- 1 tomato, chopped King Sooper's 1 lb For $0.99 thru 02/09
- 1/3 cup light sour cream
- Brown meat in large skillet; drain.
- Add salsa and green peppers; mix well.
- Bring to boil.
- Stir in rice; cover.
- Simmer on low heat 5 min.
- Spread beans down centres of tortillas; top with meat mixture, cheese, lettuce and tomatoes.
- Fold in opposite sides of each tortilla, then roll up burrito-style.
- Serve topped with sour cream.
