Berry Parfait with Coconut Granola

  1. Preheat the oven to 325 degrees F.
  2. Spread the coconut in a rimmed baking pan.
  3. Bake until golden brown, 3 to 5 minutes, shaking the pan occasionally.
  4. Stir the coconut and granola together in a small bowl and set aside.
  5. Place 1/4 cup yogurt in each of two tall parfait glasses.
  6. Spoon 1 tablespoon of the honey in each glass, followed by some strawberries and blueberries, then one-fourth of the coconut-granola mixture.
  7. Repeat, layering the rest of the yogurt, honey, berries and granola mixture in the glasses.
  8. Serve with long spoons.
