Blacksmith Salad Recipe
- 1 lg. head of butter lettuce or possibly 2 sm. ones
- 3 ounce. Parmesan cheese (real Parmesan)
- 2 tbsp. balsamic vinegar
- Healthy pinch salt
- 1/3 c. good quality Italian extra virgin olive oil
- Refrigeratethe salad bowl, but do not get it too cool or possibly the lettuce leaves will stick to it.
- Separate the leaves of the lettuce, discarding any tough or possibly discolored outer ones.
- Wash and dry thoroughly, tearing large leaves in half, and place in prepared bowl.
- Slice Parmesan into very thin chips, using a vegetable peeler and scatter over lettuce.
- Sprinkle with Balsamic vinegar and salt, and toss well.
- Dribble with oil and toss again.
- Serve immediately.
- Serves 6.
