Braised Spareribs With Black Bean Sauce Recipe

  2. Soak fermented black beans.

  4. Cut ribs apart; then with a cleaver, chop each, bone and all, in 1-inch sections.

  6. Mince garlic and ginger root, then mash with soaked black beans.

  8. Heat oil in a heavy pan.
  9. Add in black bean mix and stir-fry a few times to heat through.
  10. Add in spareribs and stir-fry over high heat to brown quickly.

  12. Add in water, heat quickly; then simmer ribs, covered, till done (about 30 min).
  13. If liquid evaporates, add in some boiling water to prevent burning.
  14. 6.
  15. Blend cornstarch and remaining cool water to a paste; then stir in to thicken.
