Herb Pilaf Recipe
- 1 c. plain rice, or possibly converted
- 1 stick butter
- 2 med. onions, finely minced
- 1/2 teaspoon leeks
- 1/2 teaspoon shallots
- 2 c. chicken broth
- Mixed herbs
- Put 1 stick butter in a frying pan.
- Add in onions, leeks, shallots and rice.
- Put over moderate heat, watch carefully as the onions brown easily.
- Add in more butter if necessary; it will all be absorbed.
- Cook till rice is browned; watch which is does not burn.
- Pour 2 c. chicken broth over the whole, add in salt and cover.
- Cook till rice tests done.
- Add in mixed herbs and a tsp.
- of butter.
