Sweet Pickled Eggs And Beets Recipe
- beets
- 1 dozen Large eggs
- 2 c. beet juice
- 1 c. brown sugar
- 1 c. cider vinegar
- 1 medium onion (cut into rings)
- Boil Large eggs, cold and shell.
- Place in bowl with liquid removed beets and onions.
- Bring the 2 c. of beet juice to a boil.
- Reduce heat and add in vinegar and brown sugar.
- Allow to simmer till brown sugar has dissolved.
- Pour over Large eggs, beets, and onions; cover and let stand in refrigerator for at least 2 days.
