Pasta Fresca

  1. Place the spinach in a covered pan over low heat for about 4 min.
  2. Chop ans set aside when done.
  3. In the same pan saute the onion, chicken and garlic until chicken is lightly brown.
  4. Minewhile in a small bowl, whisk together vinaigrette ingredients (olive oil, balsamic, white wine, pasley and salt) until well-blended.
  5. In a large pot, boil salted water, and cook pasta al dente and drain.
  6. Put the drainrd pasta back into the pot and put in the spinach, the vinaigrette and the grated parmesan.
  7. Stir well and serve.
