African-Style Chicken
- 1 tbsp. olive oil
- 1 1/4 lb. skinless, boneless chicken thighs
- 1 tbsp. curry powder
- 1 1/2 c. roasted-garlic pasta sauce
- 1 can garbanzo beans
- 3/4 c. water
- 1/2 c. peanut butter
- 2 tbsp. chopped fresh cilantro
- RICE
- In 12-inch skillet heat oil on medium-high.
- Add chicken and cook for 8 minutes, stirring often.
- Add curry and cook for 1 minute, stirring.
- Stir in sauce, beans, water, and peanut butter and heat until boiling.
- Cover; simmer on low for 5 minutes.
- Stir in cilantro and spoon over rice to serve.
