Jayce's Huevos Rancheros

  1. Saute onion in 1 tablespoon cooking oil.
  2. Stir in tomatoes, chilis, chili powder, garlic powder.
  3. Simmer, uncovered, for 5 or 10 minutes, until slightly thickened.
  4. Brush tortillas with 1 teaspoon oil.
  5. Bake at 350F (180C) for 10 minutes, or until crisp.
  6. Break eggs gently into tomato mixture.
  7. Simmer gently, covered, for 3 to 5 minutes.
  8. Layer a tortilla, 2 eggs, tomato mixture, cheese, and tobasco.
  9. Top with sour cream.
