Yellowsplit Pea Puree
- 2 cups split peas, yellow
- 6 cups vegetable stock
- 1 onion, chopped
- 1 carrot, chopped
- 1 turnip, chopped
- 1 parsnip, chopped
- 14 teaspoon marjoram, dried
- 14 teaspoon thyme, dried
- 1 teaspoon salt
- 1 onion, minced
- 2 tablespoons butter, melted
- 2 tablespoons flour
- Cook split peas, vegetable stock, onion, carrot, turnip, parsnip, marjoram, thyme, and salt together.
- Cook for two hours; drain.
- Mash in blender.
- Fry minced onion in butter until lightly browned; add flour.
- Add to mashed vegetables.
- Beat until smooth.
