Pasta with Walnut Pesto
- 1 lb. pasta
- 1 c. walnuts
- 2 c. packed parsley leaves
- 6 small sage leaves
- 1 clove garlic
- 3/4 tsp. salt
- 1/2 tsp. Pepper
- 3/4 c. olive oil
- 1/2 c. Parmesan cheese
- 1/2 c. reserved cooking liquid
- Freshly grated Parmesean
- chopped parsley
- In a large pot of boiling, salted water, cook pasta.
- Drain; reserve some of the cooking liquid.
- Meanwhile, puree walnuts, packed parsley leaves, sage leaves, garlic, salt, pepper, and olive oil in a food processor until smooth.
- Toss with pasta, 1/2 cup Parmesan cheese, and about 1/2 cup of the cooking liquid to moisten.
- Serve, topped with more freshly grated Parmesan cheese and some chopped parsley.
