Thinthukgirls Sweet Kim Chee Relish Recipe thinthukgirl

  1. Dice red onion coarsely (3/4 inch chunks).
  2. Slice kim chee coarsely also.
  3. Sautee red onion in a little bit of olive oil until just turning soft and fragrant.
  4. Add sliced kim chee.
  5. Combine with onion and sautee until mixture is red, slightly sauce-like, and soft enough to puree.
  6. Cool for one minute and pour or scoop into a blender (I used an immersion blender with the tall measuring cup it came with).
  7. For every 1 1/2 cups of kim chee/onion mixture add 1 tbsp of ketchup and 1 tbsp of plum sauce.
  8. Pulse several times until mixture is the texture you want.
  9. I served with a Ceriello sweet Italian sausage with fennel on a toasted potato hot dog roll, but imagine it would also be good with rice and bulgolgi.
