Thinthukgirls Sweet Kim Chee Relish Recipe thinthukgirl
- 1 red onion
- 1-2 cups kim chee
- 1-2 tbsp ketchup
- 1-2 tbsp Chinese golden plum sauce
- olive oil
- Dice red onion coarsely (3/4 inch chunks).
- Slice kim chee coarsely also.
- Sautee red onion in a little bit of olive oil until just turning soft and fragrant.
- Add sliced kim chee.
- Combine with onion and sautee until mixture is red, slightly sauce-like, and soft enough to puree.
- Cool for one minute and pour or scoop into a blender (I used an immersion blender with the tall measuring cup it came with).
- For every 1 1/2 cups of kim chee/onion mixture add 1 tbsp of ketchup and 1 tbsp of plum sauce.
- Pulse several times until mixture is the texture you want.
- I served with a Ceriello sweet Italian sausage with fennel on a toasted potato hot dog roll, but imagine it would also be good with rice and bulgolgi.
