Pizzelle Cookies

  1. In a large bowl beat eggs until light and frothy with an electric mixer on medium speed.
  2. Gradually add sugar, beating until smooth and creamy.
  3. Add oil and beat until well blended.
  4. Stir in lemon,orange, vanilla extracts and salt.
  5. With the mixer on low speed, add the flour a half cup at a time.
  6. Mix until smooth.
  7. Cover and chill batter at least 2 hours to enrich flavor.
  8. When ready to bake, preheat Pizzelle iron according to manufacturer instructions.
  9. Pour a thin layer of batter on hot iron (approximately 1 Tbls.
  10. of batter for a 4-inch cookie); bake for about 2 to 3 minutes or till light brown.
  11. Carefully place cookies to cool on wire rack.
  12. Cookies are thin and break easily once cool.
  13. Sprinkle with powdered sugar if desired.
