Diabetic Key Lime Pie Recipe

  1. Combine lowfat milk and vanilla.
  2. Freeze for 30 min.
  3. Combine gelatin and juice in a blender.
  4. Let set for 1 minute.
  5. Add in boiling water and Equal; blend till smooth.
  6. Refrigerateabout 45 min.
  7. Put frzn lowfat milk into a small chilled bowl and whip frzn lowfat milk till stiff.
  8. Mix in lime zest.
  9. Slowly add in the gelatin mix to whipped lowfat milk.
  10. Spoon into 2 cooked pie shells or possibly you may use a 9 x 13 inch baking dish.
  11. Garnish with lime slices and zest.
  12. Makes 16 servings.
