Simply Curried Chicken and Potatoes #5FIX
- 1 (20 ounce) package Simply Potatoes Diced Potatoes with Onion
- 1 lb boneless skinless chicken breast
- 1 (13 1/2 ounce) can light coconut milk
- 1 tablespoon yellow curry paste
- 3 green onions, chopped
- Dice chicken in 1-inch pieces.Add coconut milk,along with curry paste,to large non-stick skillet over medium heat.Bring to a boil,add chicken and potatoes.
- Reduce to a simmer,cover and cook 20 minutes,stirring a few times.
- Serve garnished with green onions.
