Low Sugar Mocha Nut Cake

  1. Combine the hot water and coffee; set aside.
  2. Cream the margarine, brown sugar and sweetener with mixer on medium speed, until mixture is light and fluffy.
  3. Add egg and vanilla; mix for 1 minute.
  4. Stir together flour, cocoa, dry milk, baking powder and salt; add to creamed mixture with coffee and nuts.
  5. Spray a 9-inch square pan with nonstick cooking oil; spread batter evenly in pan. Bake at 350u0b0 for 30 minutes.
  6. Good cake for diabetics.
