Low Sugar Mocha Nut Cake
- 3/4 c. very hot water
- 1 Tbsp. instant coffee
- 1/2 c. margarine
- 1/3 c. brown sugar
- 6 pkg. Sweet 'N Low
- 1 large egg
- 1 tsp. vanilla
- 1/3 c. cocoa
- 2 Tbsp. instant powdered milk
- 2 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. nuts
- Combine the hot water and coffee; set aside.
- Cream the margarine, brown sugar and sweetener with mixer on medium speed, until mixture is light and fluffy.
- Add egg and vanilla; mix for 1 minute.
- Stir together flour, cocoa, dry milk, baking powder and salt; add to creamed mixture with coffee and nuts.
- Spray a 9-inch square pan with nonstick cooking oil; spread batter evenly in pan. Bake at 350u0b0 for 30 minutes.
- Good cake for diabetics.
