Mushroom Pita Pizza

  1. Preheat oven or toaster oven to 400F (200C).
  2. In a heavy skillet over medium heat, heat oil.
  3. Add onions and mushrooms; saute for 5 minutes until the onion and mushrooms are tender.
  4. Meanwhile, split pita bread in half horizontally.
  5. Place pita halves directly on oven rack and bake for 5 minutes or until lightly toasted.
  6. Arrange tomato slices and basil leaves on bread.
  7. Scatter cooked onions and mushrooms over top.
  8. Sprinkle with oregrano and goat cheese.
  9. Bake 3 to 8 minutes or until begins to brown around edges.
  10. Remove from oven and cut each pita half in 4 wedges.
