Plantain Fritters
- 4 whole Ripe Plantains
- 2 Tablespoons Olive Oil
- 1 teaspoon Garlic Powder, Cumin, Salt
- 1/2 whole Onion
- 1 cup Corn
- 2 cups Flour
- 1 teaspoon Baking Powder
- 1 whole Egg
- 4 cups Oil, For Frying
- 1) Peel and slice plantains.
- Cook them in the olive oil in a cast iron skillet.
- Season with salt, cumin, and garlic powder.
- 2) Use remaining olive oil to cook the onion.
- Mash the onion and plantains together in a mixing bowl.
- 3) Add 1 cup corn, cooked
- 5) Add 2 cups flour, 1 tsp baking powder, and 1 egg (beaten).
- Mix well.
- 6) Drop spoonfuls of the batter into the oil and fry until fritters are golden brown on each side.
- Set on racks or paper towels to drain.
- Enjoy with salsa, rice and beans, and mojitos!
