Fire & Ice Hot Pepper Jelly

  1. Mix first 4 ingredients in large saucepan.
  2. Let stand 20 min.
  3. Stir in sugar.
  4. Bring to full rolling boil on high heat, stirring constantly.
  5. Cook 1 min., stirring constantly.
  6. Remove from heat.
  7. Stir 5 min.
  8. to prevent ingredients from floating to top, skimming foam as necessary.
  9. Add pectin; mix well.
  10. Pour immediately into warm sterilized jars, filling to within 1/4 inch of rims.
  11. Seal while hot with sterilized two-piece lids with new centres.
  12. Let stand at room temperature until set.
