Herbed Goat Cheese Tart

  1. On a lightly floured surface with a floured rolling pin roll out dough into a 13-inch round (about 1/8 inch thick) and fit into a 10 or 11-inch round tart pan with a removable rim.
  2. Prick dough all over with a fork and chill 30 minutes.
  3. Preheat oven to 350F.
  4. Bake tart shell on a baking sheet in middle of oven 10 minutes, or until almost cooked through but still pale.
  5. In a food precessor blend cheeses, yolks, flour, and butter until smooth.
  6. Stir in chopped herbs and pour filling into tart shell.
  7. Bake tart 20 minutes, or until filling is just set.
  8. Sprinkle tart with herb leaves and continue baking until filling and crust are pale golden.
  9. Cool tart in pan on a rack and remove rim.
  10. Serve tart warm or at room temperature.
