Simply Delicious Loaded Potato Soup #5FIX
- 1 (20 ounce) bag Simply Potatoes Diced Potatoes with Onion
- 1 (10 1/2 ounce) can broccoli cheese soup
- 6 slices bacon
- 2 cups vegetable broth or 2 cups chicken broth
- 1 cup sour cream
- In 4 quart soup pot fry bacon strips on medium-hi until crispy.
- Remove bacon.
- Crumble bacon slices set aside.
- Reserve 2 tablespoons for garnish.
- Drain all bacon drippings out of pan except for 2 tablespoons.
- Stir potatoes into grease and saute for 5 minutes until potatoes begin to brown.
- Stir constantly since you do not want the potatoes to become crispy.
- Pour Broccoli and Cheese soup and broth.
- Stir until ingredients are combined.
- Return to stove and cook on med-hi heat for 20 to 30 minutes until potatoes are very soft and soup has thickened.
- Add 2/3 cup of sour cream reserving 1/3 cup for garnish.
- Heat through about 5 minutes.
- To serve ladle 1 cup soup into bowl and garnish each with dollop of sour cream and bacon sprinkles.
