Potatoes Nicoise

  1. Preheat oven to 400F (200C).
  2. Cut garlic in half lengthwise.
  3. With cut garlic, rub inside of 1 1/2 quart shallow baking dish; set aside.
  4. Peel potatoes; cut into 1/4 inch slices.
  5. Place in bowl of cold water and set aside.
  6. Peel tomatoes (to make this easier, put in boiling water for 30 minutes.
  7. Cut into 1/2 thick slices; set aside.
  8. In a small bowl, combine the parsley, 1 teaspoon salt, tarragon, basil.
  9. Peel and thinly slice the onions.
  10. Drain potatoes well, pat dry with a paper towel.
  11. Place half the potatoes into a prepared casserole dish (spray first with non-stick spray).
  12. Sprinkle with half the parsley mixture.
  13. Add half the onions, and half the tomatoes.
  14. Sprinkle tomatoes with 1/2 teaspoon salt.
  15. Repeat layering procedure.
  16. Cut margarine into small pieces and dot onto casserole.
  17. Cover loosely with foil.
  18. Bake 45 minutes or until potatoes are fork-tender.
  19. Sprinkle top of casserole with cheese, and bake uncovered for 5 minutes or until cheese is melted and lightly browned.
